Recipe: Coconut Chocolate Bites
This simple treat is an awesome "ender" or way of signifying that you are done eating either a meal or for the day by creating a satisfying ritual...
I was introduced to the concept of the "ender" by Dr. William Clower in his book The French Don't Diet Plan: 10 Simple Steps to Stay Thin for Life. Dr. Clower describes the ender as "the explanation mark of eating enjoyment" and "the final mouthwatering morsel that also helps end between-meal cravings". There are lots of other good tips in the book, to buy on Amazon click here.
MY FAVORITE ENDER
1 cup Organic Unrefined Coconut Oil
1 package Dark Chocolate Chips (I use 60% Cacao)
1 cup chopped Macadamia Nuts (optional)
In a small sauce pan melt coconut oil on medium-low heat. Once oil has turned to liquid slowly add chocolate chips while stirring. Continue to stir until the mixture becomes smooth. Add Macadamia nuts, stir well and pour mixture into small muffin tins or ice cube trays. Refrigerate and enjoy slowly and mindfully!!!
